Heirloom Lemon Squash Cake Recipe

Heirloom lemon squash is the shape, size, and color of a lemon.

This lovely yellow squash almost looks too pretty to eat. The flavor is similar to yellow crookneck squash, but its beautiful shape, smooth skin, and lemony color make it ideal for stuffing, slicing, dicing or shredding.

The heirloom lemon squash is very versatile in the kitchen. Lemon squash can be sauteed, grilled, roasted, steamed, baked, or even eaten raw. And it makes a very delicious lemon squash cake.

Heirloom Lemon Squash Cake Recipe

2 eggs
1 cup grated yellow squash
3/4 cup sugar
1/2 cup oil
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt

  1. Preheat oven to 350 degrees. Grease an 8×8 square pan.
  2. In a large bowl wisk the eggs, squash, sugar, oil, and vanilla well.
  3. Add the remaining ingredients and mix until well incorporated.
  4. Transfer to prepared pan and bake for 45 minutes or until toothpick inserted comes out clean.
