Why make small batch Blackberry Jam?
The blackberries are flourishing this year and so here at Little Falls Farm we have been inspired to create gourmet small batch jams for our farm followers. Never having made jam before, I studied the required ingredients closely. The typical current practice is to use products like sure-jell to make the jam “set” quickly and easily. When I read the ingredients on the sure-jell package I was shocked to see, “Dextrose, Citric Acid (Assists Gel), Fruit Pectin.” Did you know dextrose is a sugar made from corn? We have friends with corn allergies and corn sensitivities, as well as being sensitive to chemical preservatives. This was my impetus for finding a way to make jam with only simple ingredients, no additives, no preservatives.
At Little Falls Farm we are passionate about being as organic and as natural as possible. After much research I discovered that great great great grandma did not have readily available commercial fruit pectin (with preservatives and unnatural additives). She just stood at the stove and slowly “cooked down” those berries until they became a beautiful jam. The art of jam making requires time, patience, constant stirring, and an observant eye to see when the color changes to a beautiful glossy hue. Old fashioned jam making is satisfying and creates an incredibly delicious and good-for-you jam. Blackberries and other fruits we use contain their own natural pectin that will gel during this small batch slow cooking process. Our jams are then sealed in their jars, so there is no need for artificial preservatives.
Each of our small batch jams in the mini jars contain one whole cup of blackberries! Blackberries are a terrific source of vitamin c and fiber. Did you know that the seeds contain healthy Omega 3 and Omega 6 fats? This is one of the many reasons we keep our blackberry seeds in our jams.
